Known as Russet Burbanks or Idahos, these large, oblong potatoes have brown scaly skin and creamy white flesh. Their high starch content results in a fluffy texture when cooked and their low water content makes them absorbent, yet light and airy when butter and cream are mixed in. Considered the superior baking potato because they cook up dry and flaky; also good for making French fries.
